HIGH IN ANTIOXIDANT LEVELS

The black/deep purple pigment of black barley shows a high antioxidant level of anthocyanin which is also found in red cabbage and beets.  However, this antioxidant is said to be more stable in grains than in vegetables.

NO PROCESSING

No processing necessary.  This product goes from field to table with no processing.

This botanical heirloom is a part of living history and it is our     way of supporting centuries-old plant varieties and preserving the genetic diversity of our food supply.  Passed down through generations and nearly lost to the western world,  this barley is considered an Ancient Grain.

ADDS A NUTTY FLAVOR

Great nutty flavor and chewy texture to add to soups, salads, stuffing and pilaf. Excellent alternative to rice, or combined with rice and other grains for rich texture and color.

HELPS LOWER CHOLESTEROL

With hulless barley, no bran is removed, leaving the complete,     whole-grain goodness of the barley in tact.  It is high in Glucan Soluble Fiber and it is this fiber  which helps to lower cholesterol and reduced glycemic levels, thus, helping to lower the risk of heart disease and diabetes.  The FDA recently labeled barley as “heart healthy”.
